Summer has turned into autumn and there is a chill in the air.  With the change in season, we feel the draw to warmth and cozy activities.  Baking is something that I naturally gravitate to this time of year more than any other season.  As we get into our fall rhythms and routines, the sight and smell of fresh baking is a staple.  It’s also apple season and I’m so excited to share my Grandma Anny’s apple cake recipe.   A nostalgic recipe to honour my late grandma who always had fresh baking on hand.

RECIPE

Grandma Anny’s Apple Cake

Step 01

Preheat oven to 350.  Then, in a stand mixer or bowl, combine all the dry ingredients.  Add margarine in with the dry ingredients, mixing with a pastry blender or flat beater attachment.

Step 02

In a separate bowl, whisk the eggs, water and vanilla.  Add to dry ingredients, mix well and then pour batter into a greased or parchment lined baking pan (I used a round pie dish)

Step 03

Peel and then thinly slice the apples.  Arrange them in layers over the batter.  The idea is to completely cover the batter with layers of apple.  Then, top the apples with 1/4 cup of sugar and cinnamon (or apple pie spice) to taste.  Then, Sprinkle sliced almonds (optional)

Bake at 350 for 45 minutes | Sift icing sugar over the cake once removed from the oven.
